Chanukah

 

Hanukkah begins at sundown on: December 26, 2005

Potato Latkes with horseradish
  • 6 large potatoes peeled, grated
  • 1 large onion
  • 3 eggs
  • 1/3 cup flour
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 3 tbsp. prepared horseradish
  • Oil for frying

Grate potatoes in a food processor or by hand grater. By hand, squeeze all
excess liquid from potatoes.

Put eggs and cut up onion in blender and blend. Stir into potatoes along
with flour, salt, pepper and horseradish. Mix well.

Heat at least 1/2 cup of oil in skillet. Drop batter by large tablespoon in oil
and flatten. Cook on one side approximately 5 minutes or until golden
brown, turn and cook the other side until golden brown. Remove from pan
and put on paper towel to absorb excess oil.

Continue cooking batter, stirring in the liquid which gathers, until the batter
is used up. Add more oil as necessary to the cooking pan.

Serve with sour cream.
